ITALIAN SEAFOOD PASTA


Ingredients:

12 oz. linguine, dried
1 Tbsp. olive or vegetable oil
1 cup green pepper, chopped
½ cup onion, chopped
2 cloves garlic, finely chopped
1 can (14-1/2 oz.) CONTADINA® Stewed Tomatoes, undrained
1 cup chicken broth
1 can (6 oz.) CONTADINA Tomato Paste
2 tsp. basil
1 lb. firm white fish, cut into 1 inch pieces

Procedure:

  • Cook pasta according to package directions; drain and keep warm.
  • Heat oil in large skillet over medium-high heat. Add green pepper, onion, and garlic; cook 3 minutes or until tender.
  • Stir in undrained stewed tomatoes, broth, tomato paste and basil. Season to taste with salt and pepper. Bring to boil; reduce heat and simmer 5 minutes.
  • Add fish; cook 3 to 4 minutes, or until fish flakes easily with fork. Serve over pasta.
