Ingredients:
1 lb ground beef or turkey
1/3 cup CONTADINA® Bread Crumbs
1/3 cup green onions, chopped
1/4 tsp black pepper
1 Tbsp olive oil
1 cup green sweet pepper, chopped
1 cup fresh mushrooms, sliced
1 can (28 oz.) CONTADINA Recipe Ready Crushed Tomatoes with Italian Herbs
6 French rolls, split
1/2 cup (2 oz.) shredded mozzarella cheese
Procedure:
- Combine beef, bread crumbs, green onion and pepper in medium bowl. Roll into 1-1/2-inch meatballs; place on baking sheet. Bake in preheated 425°F oven, 10 minutes.
- Meanwhile, heat oil in large skillet over medium-high heat. Add sweet pepper and mushrooms; cook 2 to 3 minutes or until vegetables are tender. Stir in tomatoes; bring to boil. Reduce heat to low. Add meatballs; cook, uncovered, 4 to 5 minutes.
- Spoon meatballs and sauce onto bottom half of rolls. Sprinkle each with cheese. Heat in oven, 3 minutes or until cheese is melted.
